从“大概齐”到“刚刚好” ■李奇勋晚饭后，东部战区空军某场站食堂里人渐散去。军需股助理员尹凡走到餐台前看了看菜盆——番茄炒蛋只剩一层薄汁，土豆炖牛肉见了底，紫菜汤也刚好舀完。他直起身，在随身小本上记下一笔：“今日晚餐供应量刚刚好。” 此时，协理员王锐从后厨转出来，笑着说：“咱炊事班的手艺越来越精准了。” 此前有段时间，炊事员备餐基本靠“估”——抡起大勺全凭感觉，菜量多了少了，都不好控制。一次外场飞行日，官兵在跑道边晒了一天，又热又累，就餐时面对的却是油水较大的红烧肉和已经有些半坨的面条。有些战士吃了几口便没了胃口，悄悄推开盘子。当时见此情景，尹助理员的心里沉甸甸的。问题出在哪？股务会上，军需股长告诉大家：训练任务在变、强度在变，官兵的状态也在变，而菜谱和菜量始终不变，怎能对得上实际需求？于是，军需股主动求变，他们结合每周训练计划，研究细化伙食安排——周一学习教育日，室内上课，能量消耗低；周三飞行日，外场保障十几个小时，官兵体能消耗较大……炊事员对着训练课目，一项项测算日均能量需求，最终拿出一张训练强度与膳食供给对照表。很快，针对不同任务安排，菜单和分量开始有了相应调整：教育日油少汤暖，飞行日蛋白加码、碳水压减……试行之后，不少官兵反映“饭菜挺合口”。摸准节奏之后，还要摸准数量。尹助理员带大家研究了一套精准预报机制：每天晚饭后，各分队对照飞行计划和临时任务，调整核实次日就餐的人数，炊事班据此开具采购清单，调整伙食配给数量。每餐结束，尹助理员和炊事班长都会认真对剩余菜品逐盆登记，积累出一个“剩余量数据库”。很快就摸索出较为丰富的经验：大风天热汤消耗飙升，凉菜不受欢迎；夜航补餐，面点远比米饭受欢迎……靠着这些信息数据，他们的采购备餐更加精确。一天，通信连临时接到通信紧急抢修任务，7名战士要半小时后出发。炊事班受领计划外配餐任务后，不慌不忙打开备料柜，取出准备好的食材，猛火快炒，很快就将7人份的饭菜端上桌。伙食保障不再“凭感觉”，而是像战备一样，有预案、有数据、有反馈、有调整，形成闭环。笔者翻看餐台旁的《伙食意见反馈本》，以往“菜太油”“不够吃”等意见较多，现在更多是对伙食的满意、对炊事班战友的点赞。精准保障的理念，还体现在该场站多个部门。训练部门在训练中搜集对接体能消耗数据，用于优化课目安排；油料股建立起油料消耗与油量库存动态匹配模型……“精准”按钮，使部队保障体系更加科学高效。
